HELP!!! Need to make a holiday side dish to feed 50!!?
I was thinking some kind of pasta salad ..can't think of anything else that would be easy to make (back injury prevents spending a lot of time standing and bending). Any suggestions????? Recipes??? And how many pounds of whatever you suggest would be enough to feed that many ppl??? THANKS !!!

Caesar Chicken Pasta Salad
David Herzog
24 c. (1 ½ fl. ga.l) skinned, shredded, roasted chicken breast
24 c. (1 ½ fl. gal.) hot, cooked penne pasta (about 48 oz. uncooked, tubular pasta)
16 c. (2 3 lb bags) spring mix lettuce mix or romaine hearts
12 c. (3/4 gal.) halved cherry tomatoes
4 c. thinly sliced fresh basil
4 c. green onions
2 c. shredded carrots
2 2/3 c. (1 whole bottle)T. Marzetti’s Creamy Caesar salad dressing
2 c. chopped fresh parsley
2 lbs. crumbled feta cheese
8 (1 head or ¼ c.) clove minced garlic.
Combine all ingredients in a large bowl; toss well to coat.
Serves 32 to 48
Quick Baked Beans for a Crowd

5 lbs. hamburger
1 #10 can red kidney beans, undrained
1 #10 can pork and beans
1 #10 can crushed pineapple, undrained
5 red bell peppers, seeded and chopped
5 green bell peppers, seeded and chopped
5 medium onions, chopped
2 ½ c. barbeque sauce
1 c. Worcestershire sauce
1 c. liquid smoke
1 ½ c. blackstrap molasses
In a 15” Maca Dutch oven, brown the hamburger with the onions and peppers. Add the remaining ingredients, stir occasionally. Bring to a simmer for 15 minutes.
Serves 65 to 80

Teriyaki Chicken Wings for a Party

4 qt. pineapple juice
2 qt. soy sauce
4 c. brown sugar, packed
1 c. fresh ginger, sliced
½ c. garlic crushed
20 lbs. chicken wings, sectioned and tipped, or 15 to 18 lbs. pre-sectioned wings.
In a large bowl, combine pineapple juice, soy, brown sugar, ginger, and garlic; mix well until sugar is dissolved. Section wings, and place into 1 gallon zip lock bags or a 16 quart, clean ice chest, set tips aside in 1 gallon water. Boil tips for chicken broth for other uses.
Place wing sections into marinade in the ice chest or in zip lock bags and let marinate for 2 hours minimum, overnight is best. Preheat a 20” Dutch oven and drain marinade from wing sections. Place wings into well oiled Dutch oven and bake covered for 45 to 60 minutes at 350o. Serve hot.

Dave’s Roasted Fingerling Potatoes
12 lbs. fancy mixed small fingerling, red, and purple potatoes
¼ c. bacon fat and oil, mixed
2 Tbs. rosemary
1 Tbs. herbs fines
½ c water or broth
Preheat a 16” Dutch oven over medium high heat. Meanwhile wash the potatoes and cut the larger potatoes in half to make a uniform size (large bite sized). Add oil and bacon fat into Dutch oven then add the potatoes. Fry potatoes 15 minutes stirring frequently to coat and keep from burning.
Add rosemary and herbs, stir to coat. Pour in water or broth and cover. Cook 35 to 40 minutes more, stirring occasionally or until potatoes are fork tender but not mushy.
Serves 36 to 48
