2 fish in tomatoe sauce recipes
Take one basic recipe for fish in tomato sauce and tailor it to suit your family's tastes, or try these two delicious alternatives - fish curry and fish creole... the choice is yours. Each recipe uses a 500g pouch of fish stock that your local store should carry.
Fish in tomato sauce
River cobbler and cod loin are good varieties for this dish.
Serves 4
Ready in 40 minutes
Price per serving £2.35
-500g vine-ripened tomatoes
-2 shallots, finely chopped
-2tbsp olive oil
-500g pouch fish stock
-2tsp dried oregano
-1 level tbsp cornflour
-3tbsp tomato ketchup
-600g skinless white fish fillets
-240g pack raw tiger prawns (optional)
-1tbsp chopped parsley
-Crusty bread, to serve
- Quarter the tomatoes, then scoop out the seeds and juices with a teaspoon and discard (or eat - they're deliciously juicy!). Chop the flesh.
- Cook the shallots in the oil until soft and translucent.
- Add the tomatoes, stir, then cover and cook gentlyfor 5 minutes or until soft.
- Add the stock and oregano and simmer, uncovered, for 15 minutes. Mix the cornflour with a dash of cold water until smooth and stir into the sauce with the ketchup. Heat until simmering.
- Meanwhile, cut the white fish into large cubes, add to the pan and simmer gently for 5 minutes.
- Add the prawns (if using) and simmer until they turn pink and the white fish flakes easily.
- Sprinkle with the parsley, then season and serve with bread.
Fish curry
Spice things up with this quick and creamy curry
- Make as before but in step 1 after cooking the onion, stir in 1tbsp Madras curry powder and cook for 1 minute.
- In step 2 leave out the oregano. Grate a 50g sachet creamed coconut and stir in when the sauce is simmering.
Fish creole
This dish draws on the delicious flavours of America's Deep South
- Make as before but in Step 1 cook a sliced red and green pepper and a diced stick of celery with the shallots.
- In Step 2 replace the oregano with thyme and add a dash of Tabasco.
It's worth remembering that fish is a very health option in you weekly meal intake and eating it twice a week can really help you get the recommended vitamin and essential oils your body needs. Oh and also it tastes great.
